Dolce del Pardu - Pecorino fresco del Pardu
Dolce del Pardu, produced using pasteurised whole sheep milk, is a typically sweet pecorino cheese, as suggested by its name (Dolce means sweet in Italian), and slightly aromatic.
It has a soft paste, with a few eyes, and has an ageing period of 20 days.
It can also be tasted melted near the fireplace, in the oven or inside hot soups.
