Monte Astili - Pecorino del Pardu

Monte Astili owes its name to a mountain near Cardedu, where the cheese factory is located; it is a pecorino cheese made using pasteurised whole milk, with a white paste tending towards pale yellow, with a slightly spicy taste.

It needs to age at least 60 days.

Monte Astili can be served at the beginning or at the end of a meal, with a glass of red wine, but can also be grated on pasta or other Italian first courses.
It is also very good served with all types of jam.
