Theria - Caprino fresco del Pardu

Theria is a goat cheese made using pasteurised whole milk which owes its name to a shrub which is very common in Ogliastra, the broom.

Its paste is white and soft, with a few eyes and a sweet, pleasant taste.

It is available only from January to June when the fragrance of the pastures where the milk comes from is at its best.

It has an ageing period of 25 - 30 days.
