Tia Maria - Pecorino del Pardu
This pecorino cheese is made using pasteurized whole milk, has a paste tending to pale yellow, is produced with kid rennet and has an ageing period of at least 90 days.
Its paste can be white or pale-yellow depending on the ageing period, it is compact and has occasional eyes.
Tia Maria is a cheese which can be used as an appetizer, a main course or a side dish, but it can also be served with a slightly spicy jam.
Tia Maria ("Aunt Maria") was dedicated by Franco, Anna, Mauro and Pina to their mother Maria.
