Caprinus is a goat type of cheese made by using pasteurized whole goat milk.
Its paste is white and soft, with a slight holes structure composition and a sweet, pleasant taste.
It is available only from January to June when the fragrance of the pastures where the milk comes from is at its best. It has an ageing period of 25-30 days.
