The Pecorino Sardo Maturo D.O.P., is the ‘prince’ of the classical aged Sardinian pecorino cheeses.
With respect of the official disciplinary the Pecorino Sardo Maturo DOP by Silvio Boi is created. A multi-purpose cheese, excellent accompanier for jams and sauces, especially spicy ones.
A strong flavored pecorino, pleasantly piquant and with a slightly straw-colored white paste, of compact/moderately holes structure. Aged a in special rooms with a controlled temperature of 10/11° C and humidity of 83/85%.
