From a long and careful research, we have selected the best and purest milk, microbiologically safe and strictly controlled (3 analysis per batch), to preserve all the flavors of a rich in nutrients milk as the one of the land of the over 100-year-old centenarians, of the Ogliastra region. It is a raw whole milk pecorino cheese, with a white paste tending to straw-colored, with a slightly piquant flavor.
